Green Goddess Dip
I shared this recipe in my June newsletter last year and it was a huge hit so I want to post it here for everyone to access! It’s hands down the most requested among my friends.
This is my go-to appetizer to make for book club, wine nights, etc and it is SUCH a crowd pleaser. It couldn’t be easier and I love that you can serve it with fresh seasonal vegetables, pita chips or my personal favorite - focaccia. It’s also a next level spread on sandwiches and wraps!
INGREDIENTS
1 large clove garlic, grated on a microplane
1 packed cup (~1 bunch) parsley leaves + tender stems, roughly chopped
1/2 cup packed basil leaves* (~1/3 of a bunch), roughly chopped
1 medium avocado
1.5 Tbsp white wine vinegar
Zest and juice of 1/2 a lemon
1 egg yolk*
1 1/4 tsp kosher salt
1/2 cup extra virgin olive oil
1/4 cup avocado oil (grapeseed oil or any other neutral oil will work too!)
METHOD
Add the grated garlic, chopped parsley and basil, avocado, vinegar, lemon zest + juice, egg yolk and salt into a food processor.
Pulse or blend until the herbs are finely minced, scraping down the sides with a rubber spatula halfway through to ensure you have a homogenous mixture.
Combine the olive oil + avocado oil in a container (I use my Pyrex measuring cup!). With the food processor running, slowly* drizzle in the oil until all of it has been added and you’re left with a smooth, creamy mixture.
Serve alongside crunchy vegetables, pita chips or focaccia and enjoy!
NOTES
The egg yolk is key to a creamy, rich, emulsified dip. If you’re worried about raw egg, you can (gently) drop the whole egg into a pot of simmering water 1-2 minutes. This is called coddling and it will kill any bacteria that may be on the egg shell. Just crack the egg and separate the yolk, just like you would with a raw egg!
Pro tip: The little plastic stopper that you can remove from the top of your food processor usually has a tiny little hole in it. Fill it with water over your sink to make sure yours has it. If it does, just pour all of your oil into that top part while the food processor is running and it will dispense the perfect amount of oil slowly into the mixture!
You can substitute the herbs for other soft herbs you have on hand. Examples are: tarragon, chives, mint or dill!
